Cajun Cheese Curds
Shatto Cheese Curds are the only fresh Cheese Curds offered in the Kansas City area and were awarded 2nd Place at the American Cheese Society Competition in 2015. Cheese curds are one of the greatest and healthiest foods of all time! Lots of protein and calcium but 0% carbs, 0% sugar and 0% trans fats. If you've had them before, you probably want some right now! If you've never had them, you're in for a treat!
Simply put, they are squeaky fresh delicious bite size morsels in natural random shape and form before being processed into blocks. They are the freshest result of the cheese making process. After fresh milk and cheese ingredients have been stirred and cured, curds begin to form. The whey is drained off and the curds are left to dry with the addition of a bit of salt. Their flavor is mild with about the same firmness as cheese, but has a springy or rubbery texture. Fresh curds squeak against the teeth when bitten into, which some would say is their defining characteristic. Cheese curds are sometimes referred to as "Squeaky cheese." Cheese curds are little-known in locations without cheese factories, because they should ideally be eaten within hours or at least the first 5-10 days after production, however Cheese Curds have a shelf life exceeding 3 weeks when kept refrigerated.
The curds can be eaten fresh as a snack, fried and enjoyed as fried cheese, used as a Pizza topping or they can be crumbled and put on a sandwich for a unique taste. They’re also great on top of Chili or Soup or on salads or kabobs.
